Spaghettini with Spinach, Garlic and Lemon





I make this at least once a month! Except I seared the chicken breast on both sides for about 5 minutes each, in the olive oil, and finished the chicken on another pan in the preheated oven. Then I let the olive oil cool down, then did the rest of the recipe. Added sliced chicken on top. Sprinkled some Parmesan cheese over and wow. So fresh and so simple with so much flavor! Definitely will use this as a base recipe for other variations!
