Loaded Baked Potato Casserole

The word casserole used to totally freak me out.  Just the sound of it reminds me of something my grandma would bring to an Easter brunch. Now, I'm totally obsessed. This loaded baked potato casserole is delicious! I love just throwing everything in one pan and baking it. SO easy! I added a little dollop of sour cream when I plated this, It is definitely a do-again recipe! Next time, though, I will pre-cook the bacon because I like my bacon quite crispy with no fatty bits left.
